Spanish tortilla

The Spanish ´tortilla` is without doubt the Spanish dish with the most character from the Spanish gastronomy. It is made up of eggs, potatoes, oil, salt, and in some cases onion can be added. That’s why it is also called Tortilla de patatas and originally comes from Valencia.

It is an ideal ´tapa`, always accompanied by a good Spanish wine, or a coffee with milk at breakfast time. As well as this it is a regular for dinner in parts of Spain.

It can be a base for other recipes as you can add vegetables (this style known as the ´tortilla paisana`), ham, ´morcilla`, ´chorizo` or any other Spanish meat.

There are many different kind of tortillas:

  • Tortilla de ajetes
  • Tortilla de atún
  • Tortilla de caracoles
  • Tortilla de champiñones
  • Tortilla de chorizo
  • Tortilla de espárragos
  • Tortilla de espinacas
  • Tortilla de mariscos

There are as many ways to cook the omelette as there are cooks, and each person has there own style, whether it’s the way in which they cut the potato, fry the omelette or whether they chose to add onion or not.

You can not only get a tortilla in almost every restaurant or bar or tapas bar, but also in the supermarket where it is sold already cooked and mostly just has to be reheated.

Also the Spanish tortilla can be stuffed with delicious peppers, jamon, cheese, champignons, etc.

You should differentiate between the Spanish tortilla and the Mexican kind of bread that is also called tortilla. But these are mostly uses to wrap food.
